Propyl gallate(PG) appears as fine white to creamy-white crystalline powder. It is odorless, soluble in hot water, alcohol, diethyl ether, propylene glycol, oil, etc, insoluble in cold water. PG is sensitive to heat, so it is not so stable when it is used in food, especially not used in bakery. Propyl gallate is used in fat, fried foods, greasy foods as anti-oxidant additive.
