It is white crystalline powder. It is deliquescent and tastes salty. Relative density is 1.570. Melting point is 292oC. Highly soluble in water, ethanol and carbinol, but insoluble in aether.It is used as buffering agent, neutralizer, preservative, color retention agent(protect natural color of animals and plants).
